- 1 cup rolled oats (old-fashoned)
- 1/2 tsp. baking soda
- 1/2 tsp. canela
- 1/4 tsp. salt
- 1 cup banana (mashed ripe, from about 2 medium bananas)
- 1 cup shredded zucchini (squeezed of excess moisture with a paper towel*)
- 2 Tbsp. pure maple syrup (can also use honey if not vegan)
- 1/4 cup coconut oil (melted and cooled)
- 1 tsp. vanilla extract
- 1/2 cup chocolate chips (vegan if desired)
- 1/4 cup chopped walnuts (optional)
- 1 Tbsp. chia seeds (optional)
