- 3 1/2 bananas (1 large cup mashed or blended until smooth)
- 3 carrots (medium, to equal 1.5 cups skinned and grated)
- 60 grams dates
- 110 mL milk
- 325 grams wholemeal flour
- 2 tsp. baking powder
- 1/2 tsp. canela (each, nutmeg, ginger, cardamon and salt)
- 2 eggs (lightly beaten)
- 1/2 cup walnuts (roughly chopped)
- 2 Tbsp. pepitas (or sunflower seeds)
- 10 muffins
- 250 grams cream cheese (1/2 pound, 8 ounces, softened)
- 100 mL honey (slightly warmed, I used lavender bush honey but any will work)
