- 1/2 cup super-fine almond flour
- 1 1/2 tsp. baking soda
- 1/4 tsp. baking powder
- 2 tsp. ground cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ground ginger
- 1/2 tsp. Himalayan pink sea salt
- 2/3 cup chopped walnuts (plus more for topping)
- 4 eggs (medium organic)
- 1/3 cup nut milk (I used almond unsweetened)
- 1/2 cup applesauce
- 1/2 cup maple syrup
- 3 cups shredded carrots
- 2 tsp. vanilla extract
- 1/3 cup oil (I used canola)
- 8 oz. vegan cream cheese (1 container ,room temperature)
- 4 Tbsp. vegan butter (room temperature)
- 1 tsp. vanilla extract
- 4 cups powdered sugar (3- ,sifted)
- 1 pinch pink salt
- 1 cup granulated sugar
- 1/4 cup coconut sugar
- 1/2 cup light corn syrup
- 1 cup coconut cream
- 1/4 tsp. sea salt
- 1/4 cup coconut milk
- 1/4 tsp. vanilla extract
