Description
I'm a big fan of breakfast pastries, but not so big on the refined carbs. This healthy banana pancake -- with whole wheat and Greek yogurt -- is the perfect way to indulge! It's not too "whole-wheaty" and the fruit lends a subtle sweetness. If you aren't into whole wheat flour, try subbing out half of it for unbleached all-purpose.

- 1 1/2 cups whole wheat flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1/4 tsp. salt
- 3 bananas (overripe)
- 3/4 cup milk
- 1/4 cup unsweetened applesauce
- 1/2 cup greek yogurt
- 2 Tbsp. brown sugar
- 1 tsp. vanilla extract

Directions
- Preheat griddle to 300F.
- Combine dry ingredients in a bowl and set aside. Then blend bananas, milk & applesauce with a sturdy whisk or electric mixer.
- Add Greek yogurt & brown sugar and stir until smooth. Mix in vanilla.
