  • 1/4 cup oil (we use a combination of grapeseed + olive)
  • 1/4 cup milk (dairy, nut, your choice)
  • 2 teaspoons vanilla
  • 1 3/4 cups gluten-free flour (I’ve used Mama’s Almond Blend and this recipe)
  • 3/4 teaspoon xanthan gum (omit if using another flour blend which contains xanthan)
  • 2 tablespoons ground flax
  • 1 teaspoon cinnamon
  • 1 tablespoon baking powder
  • 2/3 cup quinoa (cooked, cooled)
  • coconut sugar (for garnish, optional)
