- 1 red bell pepper (large, stemmed, seeded, and cut into 1/2-inch pieces)

turned out really good. Made half the recipe, because only had half the ingredients. Used leftover ham and some fresh pineapple. Didn’t have the red pepper so used green pepper. Added more hot sauce because we like spice. Used Jasmine rice. I’d definitely make again when I have leftover ham. Very filling meal.

I make this all the time now! I omit the siracha for the kids and they love it. To be honest, I will actually buy a ham just to make this recipe!! Thank you sincerely.
