Description
This is a quick and easy one pot dish. You can add meat if you like. I smoke my meats often so I'll add in smoked pulled pork or smoked brisket into this dish which adds the necessary (in my opinion) smoke flavor. If you do not use smoked meats, add a little liquid smoke to the dish. The green chiles will provide the heat to this dish, but if you want it a little spicier add some cayenne powder.

- 1 lb. pork shoulder (smoked, or smoked brisket)
- 1 yellow onion (large, Chopped)
- 4 cloves garlic (crushed)
- 8 Hatch Green Chiles (roasted, peeled, seeded, chopped)
- 15 oz. diced tomatoes
- 2 russet potatoes (large, or 4 small peeled, cut into 1/2 inch cubes)
- 16 oz. beef stock
- 1/2 tsp. fresh ground black pepper
- 4 Tbsp. all purpose flour (for thickening)
- 1/4 cup dry sherry

Directions
- Add meat (if not using meat, add 1 tsp liquid smoke), and rest of the ingredients to a large braiser or stock pot. Bring to a boil.
- Reduce heat to low, stir in flour, cover the pot, and let simmer for 30 minutes.
- Enjoy!

The flavor is incredible on this dish. I added cayenne to this and it was too spicy so next time I will just let the green chiles provide the heat
