- 1/2 cup panko bread crumbs
- 1 tsp. melted butter
- 1/2 cup cilantro (fine chopped)
- 1/2 cup butter
- 1/2 cup flour
- 5 cups milk
- 1/2 tsp. dry mustard
- 1/4 tsp. white pepper
- 1/4 tsp. chili powder (Chamayo, or cayenne)
- 1 tsp. salt
- 6 cups colby jack cheese (shredded)
- 1 lb. elbow macaroni, cooked and drained
- 1/4 cup pasta water
- 1/2 cup heavy cream (or half & half)
- 12 Hatch chiles (roasted, tops chopped, some charred skin removed with hand. Don't rinse chiles under water.)
- 3 medium tomatoes (cored and chopped)
