- 1 tsp. fine sea salt
- 3 tsp. baking powder
- 1/4 tsp. baking soda
- 1/8 tsp. cayenne pepper
- 1 pinch black pepper
- 3 large eggs (beaten)
- 1 1/2 cups milk
- 1/2 cup onion (diced)
- 1/2 jalapeño (seeds removed and diced)
- 2 cloves garlic (minced)
- 3 Hatch chiles (roasted, seeds removed and diced, or 1 small can)
- oil (for frying, I use peanut oil)
- 1/2 cup mayo (or plain Greek yogurt)
- 1 small jalapeño (diced)
- 1 lemon (about 2 tbsp)
- 2 Tbsp. cilantro leaves (chopped)
- 2 Tbsp. green onion (chopped)
- 1 pinch fine sea salt
- 1 pinch black pepper
