Nobody in our family is a true fan of Turkey dinner for Thanksgiving so did the dry run on this beautiful pork roast this weekend. It's a Winner and will be subbing in for the unlamented turkey. Pork loin can be dry but that is fixed with the pancetta and mushrooms that added back in luscious. I am not a regular cook-- pretty much special occasions only and this was easy and delicious. The only suggestion that was added was to make up MORE mushrooms and use them for a gravy.
