- harissa breakfast sausage (as needed)
- 1 pig trotter
- pork stock (from carcass bones, as needed)
- 4 lb. pork trimmings (ground, 50/50 blend)
- 1/2 Tbsp. spice mix (Harissa)
- 1/2 Tbsp. allspice
- 1/2 Tbsp. star anise
- 1/2 Tbsp. cumin
- 1/2 Tbsp. smoked paprika
- 1/2 Tbsp. canela
- 3 sprigs fresh cilantro (roughly chopped)

Directions
- 1. Combine pork, seasonings and cilantro
- 1. Debone trotter
- 2. Stuff with harissa breakfast sausage
- 3. Braise in pork stock at 375°F convection oven for 2½ hours
