- 1/2 cup water
- 2.2 oz. unsalted butter (4.5 Tablespoons)
- 5/8 tsp. kosher salt
- 0.3 grams freshly ground pepper
- 1/2 cup all purpose flour (+ 2 1/2 tsbp)
- 150 grams eggs (approximately 2 eggs-crack eggs into a bowl, blend eggs and weigh out amount)
- 1 cup shredded Gruyere cheese (aged)
- 2 Tbsp. shredded cheese (sprinkle tops with additional)
- 8 Tbsp. unsalted butter (115g, 4 ounces, at room temperature)
- 1/2 cup Tahini (well stirred)
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar (packed, For a crisper cookie omit brown sugar and use 200gm granulated sugar or 1 cup)
- 1 large egg (at room temperature)
- 1 large egg yolk
- 1 tsp. vanilla extract
- 1 cup flour
- 3/4 tsp. baking soda
- 1 tsp. sea salt (or kosher, Diamond Crystal, DL uses a french sea salt which is similar to a kosher salt, it is not like our sea salt, if using table salt use 1/2 teaspoon, if using Morton's kosher salt use 3/4 teaspoon)
- 2 cups semisweet chocolate chunks (or bittersweet, I used TJ's chocolate chunks)
- fleur de sel
- flaky sea salt
- white sesame seeds (black and)
- 1 cup salted butter (cut into 1/2-inch pieces)
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 1 tsp. vanilla extract
- 2 1/4 cups all purpose flour
- 6 oz. dark chocolate (semi- or bittersweet, chopped, but not too fine, you want chunks)
- 1 large egg (beaten)
- demerara sugar (for rolling)
- flaky sea salt (for sprinkling)
