Delicious, easy and a meal to make on a budget. I would probably cut the potatoes and possibly carrots smaller next time. But so good!

I've been making this soup for about 5 years because it is easy and I can use up whatever is in the frig. I change up the vegetables for variety. My favorite is to add beets. It adds beautiful color. Because I aim for even more veggies, I serve it over spaghetti squash. Just a cozy recipe all around.

We aren’t really soup people but we absolutely love this. In fact my husband requests it. Love the ground beef instead of stew meat for a change of pace.

Man O Man this was a packed soup. The flavor was excellent. I used 5 cups of broth rather than water. Everyone loved it.

Super delicious! I substituted the ground chuck for chicken breasts and half of the potato for chopped zucchini because I'm on a low carb diet.
