Very easy recipe to make and turned out yummy. I substituted baby kale for spinach, which worked out well.

My 8 year old daughter made these today & they were yummy! She added some finely diced carrot to the mix & it turned out great.
Instead of making them into large muffins she decided to do mini muffins so they could be added as a healthy snack to tomorrows lunch boxes - such a great idea!
Due to the smaller size, they cooked in a shorter time - approx. 15mins.
This recipe was easy to follow & she prepared everything herself, apart from the carrot, which I finely diced for her. (she gave it a go, but found it a bit hard to cut them)
She is thinking of adding corn or diced capsicum to the mix next time.
Highly recommended! :)
