- 1 1/2 cups ham (cubed)
- 1 Tbsp. olive oil
- 1 cup onion (chopped)
- 3/4 cup green bell pepper (chopped)
- 1 tsp. garlic (minced, 2 cloves)
- 14.5 oz. stewed tomatoes
- 14 oz. chicken broth (reduced-sodium)
- 1 tsp. Cajun seasoning
- 1 1/2 cups rice (quick-cooking)

Directions
- Heat olive oil in a large saucepan over medium heat. Cook onion, sweet pepper and garlic in hot oil about 5 minutes or until tender. Stir in undrained stewed tomatoes, chicken broth, ham and Cajun seasoning. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes. Stir in rice. Remove from heat. Cover and let stand about 5 minutes or until rice is tender.

used jasmin rice instead of quick rice
1 box of broth so the rice had enough moisture to cook
replaced the ham with hillshire smoke sausge
added a dash a cayenne papper to give it a little zip
came out fantastic! will be making this again

I've never made homemade Jambalya but this came out pretty good, even after I substitued stewed tomatoes for diced ones. I added a bit more seasoning too but the orginal recipe was still delicious. Perfect way to use leftover ham!👍

Easy, quick and very tasty! I had all of these items in my pantry. I did substitute Rotel for the stewed tomatoes and it definitely was a great substitution.

Pretty good. I substituted the pepper with carrots and used diced tomatoes instead of stewed(I was out of stewed) and it turned out good. I dialed down the pepper as I'm not into "heat" in my food. Nice change for leftover ham.
