- 3 lb. Japanese eggplant (medium, 9 or 10 eggplants)

- 1 tsp. freshly ground black pepper
- 1/2 cup water
- 1 1/2 tsp. red pepper flakes (use less if you are not a big spice fan)
- 1 cup fresh Thai basil leaves (about 1/2 bunch or regular basil)
