- 1 1/2 cups short grain rice (standard measuring cup not the cup that comes with a rice cooker)
- 1 1/2 cups water (or dashima broth or other flavorful liquid)
- 10 oz. seafood (assorted, shrimp, squid, mussels, oysters, clams, etc.)
- 1 small carrot (thinly sliced)
- 1/3 cup frozen peas (thawed)
- 3 shiitake mushrooms (caps, soaked if using dried mushrooms, thinly sliced)
- 3 oz. radish (Korean, mu, cut into short match sticks)
- 3 Tbsp. soy sauce
- 2 tsp. lemon juice
- 1 tsp. sesame oil
- 1 tsp. red chili pepper flakes (Korean, gochugaru)
- 1 tsp. sesame seeds
- 1 tsp. minced garlic
- 1 tsp. sugar
- 2 scallions (finely chopped)
- sauce (Mix all of the, ingredients together.)
