Ingredients

- 4 haddock fillets
- 25 grams butter
- 25 grams plain flour
- 1 pinch dry mustard
- 250 mL milk
- 100 grams cheddar cheese
- 2 tomatoes (large, sliced)
- 25 grams fresh breadcrumbs
- 50 grams mushrooms (sliced)

Directions
- Place haddock in ovenproof dish
- Put butter, flour, mustard and milk in a saucepan and cook constantly stirring until a thick sauce appears .
- Stir in any seasoning, plus 75g of the cheese and the mushrooms and cook for a further minute.
- Pour sauce over fish, arrange the tomatoes on top and sprinkle with breadcrumbs and remaining cheese.
- Cook in oven for 20 minutes or until fish is cooked
