- 1 Tbsp. dry active yeast
- 1 egg
- 1 1/2 cups sultanas
- 1/2 cup caster sugar
- 1 1/2 cups milk (optional)
- 1/3 cup mixed peel (optional)
- 4 1/2 cups plain flour (1/2 Cup Plain Flour, extra)
- 2 tsp. mixed spice (1/3 Cup Water)
- 1/2 cup sugar
- 2 tsp. ground cinnamon
- 2 tsp. powdered gelatine
- 50 grams butter

Directions
- Place the yeast, 2 teaspoons of the sugar and all the milk in a bowl and set aside for 5 minutes. The mixture should start to foam up. Add the flour, cinnamon, butter, egg, sultanas, mixed peel and remaining sugar to the yeast
- mixture and mix using a butter knife until a sticky dough forms. Knead the dough on a lightly floured bench for 8ish mins or until feels elastic. Place in a greased bowl, cover with a tea towel and place in a warm place for 1 hour until the dough doubles in size (I like to use the heater).
- Divide the dough into 12 pieces and roll into balls. Grease a 23cm square tin (or similar) and line with baking paper. Place the dough balls in the tin, cover with a clean tea towel and prove for 30 minutes, until they rise.
