Our homemade chicken noodle soup comes together in just 30 minutes for a quick and easy soup recipe that'll have you saying goodbye to the canned stuff for good! Loaded with tender veggies, chicken, egg noodles and the savory flavor of chicken stock, our hearty chicken noodle soup is classic comfort in a bowl. Chicken noodle soup is satisfying on its own, but to make it an even heartier meal, serve with Garlic Bread and a garden salad. While our recipe sticks to classic flavors and ingredients, you can still customize it to make it your own! Add 2–3 tablespoons of heavy cream for a creamy finish, a few lemon slices to brighten up the stock or fresh spinach or kale at the end of cooking for a more vegetable-heavy soup. If you have any leftovers, you can conveniently freeze them to enjoy during the winter months or anytime you need a cozy dish to warm you up. Simply allow the soup (without the noodles) to cool completely before transferring to freezer-safe containers. Ingredients
- 2 Tbsp. vegetable oil
- 1 cup yellow onion (chopped)
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 Tbsp. black pepper (garlic herb, and sea salt all purpose seasoning)
- 1/2 tsp. turmeric powder (ground)
- 1 lb. boneless skinless chicken breast
- 2 unsalted chicken stock (cartons, 32 ounces each)
- 2 cups medium egg noodles (uncooked)
- 1/2 cup frozen peas
Directions
- Heat oil in large saucepan on medium heat until shimmering. Add onion, carrots and celery; cook and stir 3 minutes or until softened. Stir in Seasoning and turmeric; cook 30 seconds until fragrant. Add chicken and stock. Bring to boil. Reduce heat; simmer, covered, 15 to 20 minutes until chicken is cooked through and tender.
- Transfer chicken to medium bowl; shred using 2 forks. Set aside. Stir noodles into broth; cook 6 minutes or until tender. Return shredded chicken to saucepan. Gently stir in peas. Sprinkle with parsley to serve, if desired.
