- 12 oz. pitted cherries (fresh, I used a combination of red and Rainier cherries for the best flavor.)
- 1 cup coconut sugar
- 1/4 cup honey
- 2 tsp. canela
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. cornstarch
- 2 Tbsp. melted butter (for brushing the outside of the pastry)
