- 6 red potatoes (large, or Yukon Gold, sliced into 1-inch cubes)
- 5 carrots (peeled and sliced into 1-inch chunks)
- 4 celery stalks (sliced into 1-inch chunks)
- 1 leek (finely chopped)
- 1/4 cup cold water
- 1/4 cup fresh parsley (finely-chopped)
