  • 1/3 cup onion (minced)
  • 2 cloves garlic (minced)
  • 2 jalapeno pepper (minced, adjust for spice preference)
  • 3 tablespoons fresh lime juice (or to taste)
  • 2 tablespoons chopped fresh cilantro (plus more for garnish)
  • 1 pound chicken breast (seasoned with salt and pepper and cooked, about 2-2.5 cups cooked see below instructions for my cooking method)

    Yum! We used shallots and tomato instead of onion and jalepeno. It was so delicious and an easy was to use up some left over chicken

    I modified it a little by using onion powder instead of chopped onions but I really like it so far. It tastes better when you let the chicken sit in it for a minute to get that chicken taste all around.

    Excellent! I would definitely make it again. Instead of just cooking the chicken in the oven I briefly cooked in a skillet with the salt, pepper, and oil.

    SO GOOD! I meal prepped for half the week and it lasted really well. Avocado did turn a little brown, but upping the lime juice helped w/o being too strong and I wasn’t bothered by the bits of brown. The texture & flavour was still good. I had to stop my boyfriend (and myself) from devouring the whole bowl the first night, before I even got to portion it for the week, though!!
