- 1 onion (large, chopped in pieces about 1/2 inch or slightly smaller)
- 1 poblano (large, Pasilla pepper, chopped in pieces about 1/2 inch or slightly smaller)
- 2 tsp. olive oil
- 2 lb. ground turkey (lean, I used ground turkey with only 10% fat)
- ground black pepper
- salt
- 15 oz. enchilada sauce (red chile, I recommend mild unless you really like a lot of heat; I used Hatch Gluten Free Red Chile Enchilada Sauce.)
- 3/4 cup light sour cream (plus more for serving if desired, optional)
- 27 oz. green chiles (whole green chies, I found Hatch Whole Green Chilies, 27-Ounce can at Amazon.com, but they are more expensive that way. Look for them in a Mexican market if you can.)
- 1 cup low fat mozzarella cheese (grated + 1 cup)
- 1/4 cup shredded Monterey Jack cheese (1/4 cup + 1/4 cup; low fat Four Cheese Mexican Blend)

I made lots of changes to this recipe based on what I had handy so I can’t give it a 5 star rating
What I had n hand was a pound of turkey, an onion, rotel mild, a can of Texas beans, a bag of frozen edamame, sour cream and shredded Mexican cheese

Yummy! We loved the spice but would maybe less peppers & switch out red sauce for green enchilada sauce next time if we need more mild for company this is a great comfort food!! Tastes just as good or better for leftovers!
