Made this tonight. Liked how excited the author was about it. Yes it was quick, easy and tasty. I sautéed the eggplant a little longer, as well simmered the entire dish to marry all the flavors. Net time Crumbled feta on top for a garnish would be a good idea. Enjoyed it and may make it again.
