  • 1 1/4 cups brown rice (raw cup, I use par-boiled to make it quicker)
  • 2 1/2 cups yogurt (full-fat or higher Greek-style Canadian-milk)
  • 3 cups vegetables (roasted grilled or steamed)
  • salsa (Store-bought, to taste)
  • 2 1/2 cups cheddar cheese (grated Canadian)
  • 1 handful cilantro leaves
  • 16 whole wheat tortillas (or 8 large, you may fill more or less depending on the veggies you use and how snugly you pack them)
