  • 1 pound lean ground beef
  • 1/2 yellow onion (diced)
  • 1 teaspoon cumin
  • 1 teaspoon garlic (ground)
  • 1/2 teaspoon pepper
  • 2 yukon gold potatoes (small, peeled and shredded)
  • 20 corn tortillas
  • 4 cups vegetable oil (you'll need a high heat oil for frying)
  • 1/2 head iceberg lettuce (washed well)
  • 2 tablespoons mayonnaise
  • 1 small tomato (cubed)
  • 8 ounces shredded cheddar cheese
  • 1 avocado (small, sliced)
