Description
We all love taco night, but have you tried tostada night? Crispy corn tortillas (tostadas), slathered with refried beans and topped with seasoned ground beef and vegetables (picadillo): Heavenly! Top your tostadas with shredded lettuce, avocado, radish and jalapeño slices, and a sprinkle of queso fresco for the full crunchy experience. If your market doesn’t sell flat tostadas, it’s easy to make your own. Spray 8 corn tortillas with cooking spray, sprinkle with salt, and set on 2 oiled sheet pans. Bake at 400°F for 5 minutes. Turn tortillas over, switch pan positions in oven, and bake until tortillas are golden and crispy, 5-10 minutes more. The recipe, which makes 8 tostadas, is a Yummly original created by Ericka Sanchez.
Ingredients
- 2 jalapeño chilies (divided)
- 4 radishes
- iceberg lettuce
- 2 oz. queso fresco
- 5 oz. Yukon Gold potato
- 1 medium carrot
- 1 Roma tomato (small)
- 1/4 cup white onion (finely chopped)
- 3 Tbsp. chopped fresh cilantro
- 1 Tbsp. vegetable oil
- 3/4 lb. ground beef (80/20)
- 1 tsp. garlic salt
- 1/4 tsp. black pepper
- 1 cup refried beans (part of a 16 oz. can; or use homemade)
- 1 avocado
- 8 tostada shells (flat style, not bowls)
Directions
- Thinly slice 1 jalapeño and the radishes. Cut enough lettuce into thin shreds to make 2 cups. Crumble queso fresco. Set toppings aside. Cut remaining jalapeño in half lengthwise, scrape out seeds with a spoon, and finely chop chili; set aside.
- Peel and chop potato into 1/2-inch pieces to make 3/4 cup. Peel and cut carrot the same size to make 1/2 cup. Chop tomato, and chop onion and cilantro if you haven’t already. Set vegetables aside separately.
- Heat oil in a large frying pan over medium heat. Add onion and cook, stirring often, until it begins to soften, about 2 minutes. Add potato and carrot and cook, stirring often, until they’re barely tender, 7-10 minutes; if vegetables start to stick, add a couple tablespoons water.
