- 4 portobello mushrooms (large, get the biggest ones you can find)
- 12 oz. hot Italian sausage (or mild, use turkey Italian sausage for South Beach Diet)
- 2 Tbsp. olive oil (for browning sausage and onions and brushing on mushrooms before grilling)
- 1 onion (small, finely chopped)
- 1 tsp. garlic (minced fresh, or use chopped garlic from a jar)
- 1/2 cup tomato sauce (I used garden tomato sauce from my freezer. If you open a can, just freeze the rest.)
- 1 pinch red pepper flakes (optional)
- 8 oz. spinach leaves (coarsely chopped)
- 2 Tbsp. fresh basil (chopped, probably optional, but recommended)
- 2 Tbsp. fresh parsley (chopped, probably optional, but recommended)
- 1/2 cup mozzarella (grated, plus 1/2 cup for sprinkling on top, I used low-fat mozzarella)

Excellent!!! I put the caps and gills in with the onions and added tomatoes and balsamic vinegar on top very good!

Amazing my husband loved it and says it’s a keeper. I did adjust my to be a vegetarian style and I loved it.

Delicious! I replaced mozzarella with the fresh version of it and added some chilli flakes.
