- 2 1/4 cups all purpose flour (plus more for kneading and rolling)
- 1 tsp. sugar
- 1/2 tsp. salt
- 1 1/2 Tbsp. olive oil
- 1 cup habanero (Bothwell's, with Cracked Black Peppery Monterey Jack, shredded)
- 1/4 cup olive oil
- 3 cloves garlic (minced)
- 1 tsp. dried basil
- 1 tsp. dried oregano
- 1 yellow zucchini (large, cut into 1/4 inch slices)
- 1 red onion (large, peeled and sliced into 1/4 inch thick rounds)
- 1 green bell pepper (large, seeds removed and discarded, cut into 1 inch pieces)
- 1 orange bell pepper (large, seeds removed and discarded, cut into 1 inch pieces)
- 4 portobello mushroom caps (large, sliced 1/2 inch thick)
- 1 cup cherry tomatoes
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 1/2 tsp. red chili flakes (dried, optional)
- 8 whole basil leaves (roughly chopped)
- 1/4 cup Parmesan cheese (for garnish, optional)
- 2 Tbsp. olive oil
