- 15 oz. fresh corn (corn, sweet or regular or grilled,boiled, baked)
- 1 1/2 Tbsp. mayonnaise
- 1 Tbsp. sour cream
- 1 lime juiced
- 1 1/2 cups refried beans
- 1 tsp. adobo
- salt
- pepper
- 2 Tbsp. feta cheese (crumbled)
- 1 small red onion (diced)
- 1 medium avocado (peeled and cubed)
- 1/2 cup green cabbage (or red, shredded)
- 6 cherry tomatoes (for garnish, optional)
- 1 tsp. cayenne pepper (to sprinkle on top)
- 1 Tbsp. cilantro (finely chopped for garnish, optional)
