- 2 slices red onion (from a large)
- 3 large carrots (peeled and quartered lengthwise)

- 8 whole mini bell peppers (tri-color, or 1 large red or yellow bell pepper, quartered)

- 1/4 cup cilantro leaves (finely chopped, and tender stems)
- 1/4 cup chopped fresh mint (finely)
- 1/4 cup thai basil (finely chopped, or sweet basil)
- 2 cups jasmine rice (cooked and cooled, see note)
- 1/2 cup toasted cashews (lightly)
