  • 2 teaspoons paprika
  • 1/2 teaspoon salt
  • 4 pounds turkey cutlets
  • 1 Bird's eye chili (deseeded, thinly sliced)
  • 1 tablespoon olive oil
  • 1/4 cup lime juice
  • 1 red onion (cut into thin rings)
  • 1 red pepper (deseeded, cut into thin rings)
  • cilantro sprigs (fresh, to garnish)

    Directions

    1. Rub paprika and salt on turkey. Place in a bowl. For the marinade, combine chili pepper with olive oil and half the lime or lemon juice. Pour on turkey, cover and refrigerate 4 hours or overnight, turning once or twice.
    2. Preheat grill to medium-high. Grill turkey 8 mins, brushing with marinade and turning, until cooked through.
    3. Toss onion in remaining lime or lemon juice. Arrange turkey on a platter and sprinkle with peppers, onion, cilantro and lime or lemon juice. Serve hot or at room temperature.
