Description
Grilling tuna steaks is easy — seriously! And the latest version of the Yummly Smart Thermometer (model YTE010W5MB) makes it even easier because it tells you when to flip your tuna and take it off the heat. Tuna is a firm, meaty fish that lends itself to the grill and all that great flavor. This teriyaki-orange glaze takes the tuna to a whole new level of deliciousness, and it makes plenty for serving with a side of rice and vegetables. The glaze also works wonderfully well on pork as well as chicken. The recipe is a Yummly original created by David Bonom.
Ingredients
- 1 cup fresh orange juice
- 1/4 cup packed brown sugar (light or dark brown sugar)
- 1/4 cup reduced-sodium soy sauce
- 2 Tbsp. rice vinegar
- 2 Tbsp. water (plus 2 tsp. for the cornstarch)
- 4 slices fresh ginger (each quarter-sized)
- 1 1/2 tsp. cornstarch
- 4 ahi tuna steaks (each about 8 oz. and 1 to 1 1/4 inches thick)
- 1 Tbsp. canola oil
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- green onions
Directions
- Preheat a grill for high heat (450° to 550°F).
- Bring orange juice to a boil in a small saucepan over medium-high heat. Boil until reduced to 1/2 cup, 7-8 minutes. Remove pan from heat and stir in brown sugar, soy sauce, vinegar, 2 Tbsp. water, and the ginger.
- Bring orange juice mixture to a boil, then reduce heat to medium-low and simmer for 5 minutes. Meanwhile, in a small dish, stir cornstarch with 2 tsp. water until dissolved.
