- 1 block extra firm tofu (sliced about ¼-inch thick)
- 3 Tbsp. extra virgin olive oil
- 1 lime
- 1 garlic clove (minced)
- 1/2 tsp. agave
- 1/4 tsp. onion powder (or a few tablespoons of fresh minced onion)
- 1/4 tsp. paprika
- 1/4 tsp. chipotle
- 1/4 tsp. cumin
- sea salt
- black pepper
- 1/2 cup red cabbage (very thinly sliced)
- 2 tsp. rice wine vinegar
- 2 tsp. lime juice
- sea salt
- 1 pinch sugar (optional)
- 1/2 cup unsalted cashews
- 1/2 cup water
- 1 lime (a few tablespoons)
- 1 avocado (small)
- 1/2 jalapeño (roasted, chop up the other half as part of your taco filling*)

- white wine vinegar (Splash, to temper spice, optional)
- tortillas
- corn (Grilled or roasted, I roasted corn at the same time I was roasting my jalapeño – it may need less time, but just watch it, it’s forgiving.)
