- 1/4 cup packed brown sugar
- 2 tsp. ground cumin seed
- 2 tsp. freshly ground black pepper
- 1 Tbsp. chili powder (see note)
- 3 cloves garlic (finely minced, about 1 tablespoon)
- 2 lb. skirt steak (trimmed, about 1 whole steak; see note, cut crosswise into 5- to 6-inch pieces, see our detailed trimming instructions here)
- 1 large red bell pepper (stemmed, seeded, and cut into 1/2-inch-wide strips)
- 1 yellow bell pepper (large, stemmed, seeded, and cut into 1/2-inch-wide strips)
- 1 large green bell pepper (stemmed, seeded, and cut into 1/2-inch-wide strips)
- 1 yellow onion (or white, cut into 1/2-inch slices)
- 16 flour tortillas (fresh)

I usually find SE recipes pretty solid. Brown sugar seemed like a weird choice for this recipe. Especially 1/4 cup. It was. The sweetness was all wrong for the flavor profile.

I’ve tried scores of fajita recipes. All fall way short. I tried this on a whim knowing I was doing it with half the ingredients.
I only had one lime (not 6-8). I had to use olive oil instead of canola. I had to use garlic powder instead of real garlic. I had to use coriander powder instead of cumin. And I used CAB sandwich beef instead of skirt steak which is all I had at hand. And it was AMAZING! Great flavor! Way better than other recipes. Can only imagine how it will taste when I can make with the right ingredients. I did marinate for 3 days before putting on the grill but still...awesome recipe 😀

These may be the best Fajitas I have ever had. I used flank steak and marinated for 24 plus hours. The marinated peppers and onions were cooked on the grill in a vegetable basket and added an amazing char flavor to our fajitas. I also used the same marinate for a couple chicken breast to give our guests a choice of meats. Both meats were grilled on my gas grill. Turned out amazing with a little sour cream, guacamole and salsa. Fantastic blend of flavors. Thanks! We will definitely make these again.

To be honest, I used the recipe for the marinate, and I cooked the fajitas on the stove. But the result was great, wonderful fajitas that will be a fixture in the future!

I have used this repeatedly and it always turns out great I would add a little more lime juice and slightly less soy sauce but otherwise absolute spot on

Wife and kids loved it. To better suit my own tastes, i will add a little fresh ginger to the marinade next time. But overall, it was a winner in our house.

Delicious. Followed the recipe pretty much precisely, but I tried two versions, one pre sliced and soaked, and one where I cooked then sliced it. Both were good. Cooked it in my cast iron on the stove

We love this! I used tin foil pans on the grill and it was great. We've used the marinade for just steak and chicken too.

Awesome...love the flavor!!! This is my go to recipe for skirt steak!!! love it!! Im not a steak eater...but had the taste for some fajitas...and we (Regi) and I loved it! He isn't a skirt steak fan...but a thumbs up..Another view said use the smoke flavor..a must!

Always turns out great. I use a foodsaver to vacuum seal the flavored into both the meat and Veges. This recipe makes a great family style platter. This is now my go to recipe.

This turned out really nice. Great flavor. My wife usually hates fajitas (I don't get it) but I think these won her over. I will make again!

This was very delicious. I love the peppers and the flavor they added to bring a sweet fajita taste. Definitely a hit with the roommate. Got some spicy pico de gallo to get some spicy in the dish and it create the perfect level of spicy and sweet.
