- 1 Tbsp. basil leaves (chopped)
- 2 Tbsp. olive oil
- 1 pinch red pepper flakes
- 72 oz. blade pork steaks
- 2 Tbsp. water
- 1/3 cup kosher salt
- 1/2 tsp. butter
- 1 cup polenta (fine coarse)
- 1/4 cup asiago cheese (OR Parmesan cheese, grated)
- 2 Tbsp. basil (OR Italian parsley fresh, chopped)
- black pepper (To taste, fresh ground)
- 8 oz. butter (room temperature)
- 2 Tbsp. whole grain mustard
- 1 Tbsp. dijon (style mustard)
- 1 Tbsp. soy sauce
- 2 Tbsp. chives (fresh, chopped)
- 2 Tbsp. basil (fresh, finely slivered)
- 1 Tbsp. shallots (OR scallions, chopped)

Directions
- Combine garlic, basil, oil and red pepper flakes.
- Rub on steak & marinate in refrigerator 4 hours, turning steaks after 2 hours
- Bring steaks to room temperature before grilling
