- 1 1/2 lb. red skin potatoes (small to medium, washed, dried and cut into small pieces)

- 2 tsp. fresh thyme leaves (chopped)
- 1 Tbsp. oil (approximate)
- 1/2 tsp. cracked pepper (freshly, more to taste)
- 2 pinches kosher salt (large, more or less to taste)
- 1 cup balsamic vinegar
- 1/4 cup honey
- 3 sprigs fresh thyme
- 1/2 lemon (Juice from)
- 2 pinches kosher salt
- 1 pinch freshly ground black pepper
- 1 red onion (medium, peeled and sliced crosswise into rings a little less than ¼ inch thick.)
