- 4 Tbsp. pesto (store bought or homemade)
- 4 oz. fresh mozzarella (packed in water)
- 1 Roma tomato (sliced thinly, I also added yellow cherry tomatoes halved, but they are optional)
- 2 cups baby arugula
- 1 Tbsp. pine nuts (optional)
- 1 Tbsp. olive oil
- 1/2 Tbsp. fresh lemon juice
