- 2/3 cup apricot preserves (or jam)
- 1/3 cup sherry vinegar (or substitute red wine vinegar)
- 2 tsp. crushed red pepper flakes
- 1 lemon (about 1 teaspoon lemon zest)
- 1/4 cup fresh mint leaves (packed, finely chopped, plus more for sprinkling on top)
- 3 lb. leg of lamb (boneless, fat trimmed, cut into 1½-inch cubes, If the lamb is very fatty you might want to buy an extra ½ pound)
- 12 black mission figs (–14 fresh, or Brown Turkey Figs, halved lengthwise through the stem, look for firm ripe figs. If they’re overripe or mushy they won’t hold up on the grill)
- 1/4 cup extra virgin olive oil
- 2 Tbsp. minced garlic (3–4 medium cloves)
- 1 Tbsp. ground cumin
- 2 tsp. ground coriander
- 2 tsp. kosher salt
- 2 tsp. aleppo pepper (or substitute Maras pepper or 1 teaspoon of freshly ground black pepper)
- 6 scallions (trimmed and cut into 1½-inch pieces, look for thick scallions)
