- 1 red onion (large, diced)
- 6 cloves minced garlic
- 3 Tbsp. olive oil
- 1 apple (large, thinly sliced)
- 8 diced tomatoes (large very ripe, with the skins removed, or a 28-32 ounce can crushed tomatoes)
- 1 1/4 cups brown sugar
- 1/2 cup balsamic vinegar
- 1 tsp. ground thyme
- 1 tsp. chili paste (crushed, or 1/2 tsp cayenne pepper, more or less to taste of either if you want to better control the heat)
- 2 Tbsp. smoked paprika
- 2 Tbsp. chili powder
- 1/2 whole nutmeg (finely grated)
- 2 Tbsp. ginger (fresh finely grated)
- 1 tsp. kosher salt
- 1 tsp. ground black pepper (freshly)
- 4 lb. chicken wings (tips removed and cut in two pieces)

- 1 cup bbq sauce (Brown Sugar Balsamic)
- 1/2 cup honey
- 1 1/2 tsp. hot sauce (I like to use sriracha hot chili sauce, more or less to taste)
