- 1 1/2 lb. boneless, skinless chicken breasts (cut into 1 1/4-inch cubes)
- 1/3 cup olive oil (divided, plus more for grill)
- 1/2 cup fresh lemon juice (about 2 large lemons)
- 2 Tbsp. red wine vinegar
- 2 cloves garlic (minced)
- 1 tsp. oregano (fresh chopped, or 1/2 teaspoon dried)
- 1/2 tsp. fresh thyme (or 1/4 teaspoon dried)
- 1/2 tsp. fresh dill (or 1/4 teaspoon dried)
- 1/2 tsp. ground coriander

- 3 bell peppers (large sweet, I used red, orange and green diced into large chunks)
- 3 medium zucchini (sliced into 1/4" rounds)
- 1/2 cup cherry tomatoes (halved)
- 1/2 cup sun dried tomatoes
- 1/2 cup artichoke hearts (jarred, Quartered)
- 1/3 cup Greek olives (Assorted)
- 1/3 cup feta cheese (crumbled, optional - leave out for dairy free option)
- 1 cup nonfat plain greek yogurt
- 1/2 English cucumber (with peel, grated)
- 1 clove garlic (presssed)
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. extra-virgin olive oil
- 1 tsp. grated lemon zest
- 2 Tbsp. chopped fresh dill
