- 1/2 Tbsp. oregano (each of dried:, thyme, smoked paprika, garlic powder, chili powder and coriander)
- 1/4 tsp. salt (each, and pepper, or more to taste)
- 1 cup cilantro (loosely packed)
- 1 cup parsley (loosely packed)
- 3 cloves garlic (crushed)
- 1 shallot (peeled and rough chopped)
- 2 jalapeno peppers (remove seeds and ribs for less spice.)
- 1 lime (large, or 2 small limes zested and juiced)

- pepper
- 1/4 cup extra virgin olive oil (or enough to get it to a smooth consistency.)
