- 2 stalks lemongrass (fresh, tender inner white parts only, chopped)
- 1/4 cup yuzu juice
- 1/3 cup chopped cilantro (finely)
- 1 cup canola oil (plus more for greasing)
- 8 boneless skin on chicken thighs (about 3 pounds)
- 1/3 cup mayonnaise
- 2 tsp. shiro miso (see Note)
- 2 tsp. Sriracha

You can typically find yuzu kosho in a Japanese or Asian grocer, or seek it out online. However if you can't find it, I have a handy substitute you can use instead. If not, you can use the zest of 1 lemon, ½ finely chopped jalapeño and ½ tsp sea salt in its place. Ponzo or lemon juice for yuzu juice
