- 1 pkg. Daiya cheddar (slices)
- 3 Tbsp. soy (Earth Balance, Free Spread, or non dairy spread you choose, as needed)
- 2 Tbsp. coconut oil
- 2 Tbsp. olive oil
- 1 onion (medium, peeled, diced)
- 1 piece fresh ginger (peeled, grated)
- 1 Tbsp. fennel seeds
- 1/2 tsp. ground ginger
- 3 cups carrots (peeled)
- 5 apples (seeded, peeled, chopped, about 4 cups – I left some unpeeled, and used granny smith and honey crisp varieties)
- 6 cups water
- 2 Tbsp. coconut nectar (or agave nectar)
- 1 tsp. kosher salt
- 1 tsp. crushed black pepper
- 1 granny smith apple (cored, finely diced for garnish, optional)
