- 2 Roma tomatoes (chopped)
- 1 yellow onion (medium, peeled and cut into chucks)
- 1 zucchini (OR yellow squash, sliced 1/2-inch thick)
- 8 mushroom caps
- 1/2 cup Italian dressing

Directions
- On each skewer, alternate all ingredients except Italian dressing. Brush skewers liberally with dressing. Place over a medium-hot fire and grill, turning often, for 8-10 minutes, until vegetables are nicely browned.
