- water (to cover by 2 inches)
- 1/4 tsp. turmeric
- 1/4 tsp. paprika (or cayenne)
- 1 tsp. salt
- 2 Tbsp. vegetable oil
- 1 1/2 Tbsp. brown mustard seeds
- 1 1/2 Tbsp. cumin seeds
- 1 handful curry leaves
- 2 large onions (chopped)
- salt (to taste)
- 2 Tbsp. minced garlic
- 2 Tbsp. ginger paste
- 1/4 tsp. turmeric
- 1/4 tsp. paprika
- 1/4 tsp. cayenne
- 1 1/2 Tbsp. ground coriander
- 1 1/2 Tbsp. ground cumin
- 5 green tomatoes (large, cut into chunks, divided)
- 1/2 cup chopped peanuts (finely, I used roasted and salted)
- 1/2 cup water (divided)
- 1/4 cup brown sugar (muscovado, or jaggery or brown sugar plus a little molasses)
- 1 tsp. Garam Masala
- 1/2 lime (juicy, to taste*)
- 1/3 cup cilantro leaves (chopped, and fine stems)
- 1 cup salted peanuts (scant whole roasted and)
