- 1 can coconut milk
- 2 soy curls (servings of rehydrated, or tofu, optional)
- black rice (for serving)
- 4 Tbsp. green curry paste (vegan-friendly, to preference)
- 1 Tbsp. coconut oil
- 3 kaffir lime leaves (or 3 large pieces of lime peel*)
- 1 Tbsp. lemongrass (paste)
- 1 inch ginger (piece of, thinly sliced)
- 2 garlic cloves (thinly sliced)
- 2 Tbsp. coconut aminos
- 1 Tbsp. coconut sugar
- 1 handful sweet basil
