- 1 lb. fish fillets (white-fleshed, such as tilapia, red snapper or cod, TFD prefers Black Cod)
- 1 tsp. kosher salt
- 3 Tbsp. cornstarch
- 3 garlic cloves (minced)
- 1 Tbsp. ginger (thinly sliced)
- 1 qt. chicken broth (TFD prefers chicken broth)
- 2 Tbsp. Shaoxing wine (or golden sherry)
- 1 Tbsp. light soy sauce (Chinese)
- 4 stalks Chinese celery (with leaves, or 3 stalks Western celery, cut into batons about 3 inches long and ½ inch wide, TFD note - if forced to use Western celery, de-string it first)
- 1 seedless cucumber (cut in similar size to celery)
- 1 cup soybean sprouts
- 2 Tbsp. Sichuan peppercorns (green)
- 4 scallions (cut in 2-inch lengths)
- salt (Additional, if needed)
- 2 Tbsp. oil (green Sichuan pepper, optional, TFD note - I like it with this)
- 4 jalapeno chilies (thinly sliced green, according to their heat level and your desired spiciness)
- 1 cayenne pepper (thinly sliced, for contrasting garnish, optional)
- cilantro (for garnish, optional)
