- 1 shallot (medium, peeled and minced)
- 2 cloves garlic (peeled and minced)
- 2 Tbsp. fresh dill (minced)
- 1/2 cup fresh chives
- 2 Tbsp. minced chives
- 1 tsp. lemon juice (freshly squeezed, or red wine vinegar)
- 1 tsp. Dijon mustard (or 1/2 teaspoon dry mustard, optional)
- 1/4 tsp. sea salt (or kosher)
- freshly ground black pepper
- 1/2 lb. green beans (trimmed)
- 1/2 lb. sugar snap peas (tough tips and strings removed)
- 1 cup green peas (fresh or frozen, thawed)
- 1 head romaine lettuce (or Boston, cored and leaves torn or sliced, I often slice Romaine and tear softer lettuces, like Boston)
